Spicy Kiwi Salsa

  • 8 kiwis, firm but ripe
  • 45 mL (3 Tbsp) red onion, chopped
  • 1 jalapeño pepper, minced (seeded if desired)
  • 30 mL (2 Tbsp) fresh cilantro, chopped
  • ½ lime, juiced
  • Salt to taste

    Wash and peel kiwis. Chop the kiwis into a small dice. Mix the kiwis, red onion, jalapeño pepper, cilantro and lime juice in a bowl. Salt to taste, and gently mix again. This salsa is best enjoyed the same day. Makes 6 servings.
