Strawberry Salsa

- 30 mL (2 Tbsp) lemon juice/li>
- 15 mL (1 Tbsp) extra-virgin olive oil
- 1 mL (¼ tsp) salt
- Pinch of black pepper
- 30 mL (2 Tbsp) finely chopped shallot or red onion
- 30 mL (2 Tbsp) thinly cut fresh basil
- 500 mL (2 cups) strawberries, hulled and chopped

Whisk together lemon juice, oil, salt and pepper in a medium bowl. Mix in the shallot (or onion) and basil. Add strawberries to the lemon juice mixture and stir until evenly blended. Enjoy on bread or a cracker or as an accompaniment to grilled chicken, pork or seafood.
Makes 4 to 6 servings.
