Tzimmes


  • 2 large yams or sweet potatoes (about 908 g/ 2 lbs), peeled, cut into 2.5-cm (1-inch) cubes
  • 454 g (1 lb) carrots, sliced
  • 125 mL (½ cup) orange juice
  • 375 mL (1½ cups) pitted prunes
  • 125 mL (½ cup) dried cranberries or raisins
  • 45 mL (3 Tbsp) brown sugar
  • 5 mL (1 tsp) cinnamon
  • Salt and pepper, to taste

Place all the ingredients into a 5.7-L (6-qt) multiuse cooker then stir until well combined.

Place the lid on; turn the manual pressure on for 2 minutes. When done, let the pressure out using the quick release.

If it’s more liquid than you’d like, keep the lid off and turn the sauté button on until liquid evaporates to your liking. It shouldn’t be soupy.

Makes 6 servings.
