Sweet and Citrusy Turkey Lettuce Wraps
- 60 mL (¼ cup) low-sodium soy sauce
- 30 mL (2 Tbsp) honey
- 15 mL (1 Tbsp) rice wine vinegar
- 3 mandarin oranges, 1 zested and lightly juiced and 2 peeled and segmented
- 15 mL (1 Tbsp) extra-virgin olive oil
- 2 large garlic cloves, minced
- 770 g (1.7 lbs) ground turkey
- 8 to 10 romaine lettuce leaves
- 250 mL (1 cup) green grapes, coarsely chopped
- Carrot matchsticks, chopped cilantro, for garnish (optional)
In a small bowl, whisk soy sauce, honey, vinegar, zest and juice of 1 orange and segments; set aside.
Heat oil in a large non-stick skillet over medium heat and sauté garlic for 1 minute. Mix in turkey and cook until fully browned; remove from stovetop. Drain excess liquid, then return to heat. Stir soy-orange sauce into turkey; cook for 10 minutes.
Spoon 30 mL (2 Tbsp) to 45 mL (3 Tbsp) turkey into lettuce cups. Top each cup with grapes and, if desired, sprinkle with carrots and cilantro. Makes 8 to 10 servings.
