Christian Marcil and Vicky Ouellet co-own Les Trois Mousquetaires, a microbrewery in Brossard, Quebec, that specializes in German-style beer.
For a while we were one of the only breweries producing lagers, because they take more time to make,” says Marcil, who has been with the brewery since 2011. “We use Quebec malt for most of our beers, and if we can’t get [that], then we use [other] Canadian ones."
One of their beers, gose, is a sour German beer first brewed in the early 13th century. “Gose is an old-style German beer. It has coriander and grey salt, which we get from Costco,” says Marcil. “It’s a light, sour beer with a salty touch, and then coriander adds lime flavours.”
Their gose even took home gold at the World Beer Awards in 2014 and 2018, for best German-style sour beer. “We work really hard to make good beer,” Marcil says, “so when we hear feedback like that, it’s really nice.”—Naomi Hansen
