Mashed Potato and Stuffing Waffles

- 500 mL (2 cups) leftover stuffing
- 500 mL (2 cups) leftover mashed potatoes
- 2 large eggs, lightly beaten
- 15 to 30 mL (1 to 2 Tbsp) all-purpose flour
- Leftover gravy
Preheat the waffle maker.
In a large bowl, gently mix together the stuffing, mashed potatoes, eggs, and 15 mL (1 Tbsp) of flour. Do not overmix. If the batter looks too runny, mix in additional flour.
When the waffle maker is hot, spray with cooking spray. Pour the batter in the waffle maker (about 250 mL/1 cup per waffle). Cook 5 to 6 minutes, or until the waffles are golden and crispy on the outside. Serve immediately with gravy. Makes 4 to 6 servings.
Tip:Top with fried eggs or your favourite leftovers.
