Slightly tangy with fragrant aroma, this sheep’s milk cheese is made by the cheesemakers in Puglia, Italy. A typical southern Italian semi-hard cheese with elastic consistency, few holes and pale-yellow paste is produced according to traditional recipe using natural rennet. Southern Italians used it mainly as a gratin cheese, but over the last few years, this “Coratino” has emerged as a delicious table cheese.
