This Alpine cow’s milk cheese takes its name from the town of Bra, the birthplace of the Slow Food movement. Produced in the mountains of the Piemonte region, this cheese is ripened for a minimum of 6 months. It has a hard, yellow, pinhole paste texture, with intense, piquant, and dry notes of fresh cow’s milk. It can be paired with full bodied red wines along with chestnut honey and rye bread.
